Sourced from Sri Lanka where coconut sugar is used as the main natural sweetener for the local population and provides income to many families.
The coconut blossom is "tapped" to obtain the nectar. An average tall coconut tree produces 3 to 4.5 litters of fresh nectar per day. The collected nectar is then evaported to produce a semi-solid brick. After it has cooled down, the brick is granulated to produce a light brown sugar rich in minerals and vitamins.
Typically a farmer can collect nectar from 30 to 50 trees a day yielding an average of 15kg of coconut sugar per producer family or 450 kg per month. (FAO)
